Pumpkin, Pumpkin, and more Pumpkin Recipes!!!

I find it ironic that I hate pumpkin pie but I love these pumpkin recipes so I thought I would share them with you.  Sorry no pictures but if I make them again, I'll add them.  Enjoy!!!

"Pumpkin Spice Bars"

(Posted on Kim's Blog, but thought I would post it again for my friends that don't read her blog)

4 eggs
1 2/3 Cup granulated sugar
1 cup oil (I use 1/2 cup applesauce, 1/2 cup oil)
1 16oz. can pumpkin
1 tsp. salt
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp. baking soda

Beat eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour baking powder, cinnamon, salt & baking soda. Add pumpkin and mix thoroughly. Spread batter in ungreased cookie sheet (15x10). 
 
Bake at 350 for 25-30 minutes.
 
Frosting
1 3oz. package cream cheese (softened)
1/2 cup butter
Mix butter and cream cheese together add:
1 tsp. vanilla
2 cups powdered sugar

Frost pumpkin bars after they a cooled!

"Pumpkin Pancakes"

(Recipe from Grandma Moutray)

2 cups of biscuit/baking mix (I use bisquick)
2 T. brown sugar
2 tsp. ground cinnamon
2 eggs
1 can (12 oz) evaporated milk
1/2 cup canned pumpkin
2 T. vegetable oil
1 tsp. vanilla extract

In a bowl, combine the baking mix, brown sugar, and cinnamon.  In another bowl, combine the eggs, milk, pumpkin, oil, and vanilla; stir into dry ingredients and mix well.  *I like to add chocolate chips to mine before I flip the pancakes*

Yield 1 dozen pancakes.

"Pumpkin Dessert"

(Recipe from Jayanne)

29 oz. can of pumpkin
1 (12 oz) can of evaporated milk
1 cup sugar
1 tsp. salt
1 tsp. ginger (I omitted this)
1 tsp. nutmeg
2 tsp. cinnamon
3 eggs, beaten

mix until smooth and pour into a 9 x 13 pan

Sprinkle 1 box of yellow cake mix without pudding over the top of pumpkin mixture.  Sprinkle with almonds (or any other nuts) if desired.  Pour 1/2 cup of melted butter over the top.

Bake at 350 degrees for 1 hour, or until knife comes out clean from the center.

Serve with whipped topping.

I've got a great pumpkin chocolate chip recipe! EASY!!!!!

1 small can pumpkin (15 oz?)
1 spice cake mix
chocolate chips

Mix together and bake 350 for 15-17 min.

I usually add a little flour so they are more cake like. Don't add too much though!

sorry, they are pumpkin chocolate chip COOKIES! So drop them on a cookie sheet and bake 15-17 minutes.

I forgot how good the pumpkin bars are. We were invited over to a friends house for dinner on Sunday and I brought them for dessert. They are so evil and yummy!
I learned how to make your own pumpkin mix. I'll have to share it. You'll need some time when doing it.
